What brand of waffle mix does Walt Disney World use?
Millions of people around the world have enjoyed eating the Disney character waffles at Walt Disney World. They probably wondered what waffle mix they were using so that they could make the same delicious Disney character waffles at home. Well, wonder no more. The waffle mix that is used by Walt Disney World is the really popular Carbon’s Golden malted pancake and waffle flour mix.
It was created in 1937, about 80 years ago, by Fred S. Carbon. The two main ingredients are enriched wheat flour, which is made from wheat flour, niacin, reduced iron, thiamin mononitrate, riboflavin, and folic acid, and corn flour. The leavening agents are baking soda, monocalcium phosphate, and sodium acid pyrophosphate. Another one of the main ingredients is malt barley extract which gives the waffles a delicious sweet and roasted flavor. Two percent or less of the following ingredients are used in the mix: salt, sugar, buttermilk, and artificial flavor.
This waffle mix contains wheat and dairy so people who are allergic to either including people with celiac disease should not use this mix.
Golden Malted is the largest distributor of waffle mix in the United States and you can find their products at the best restaurants, hotels such as Comfort Suites and Quality Inn, and theme parks such as Disneyland.

-1 package ( 2-1/2 teaspoons) of active dry yeast
-2 cups of warm milk (110 degrees Fahrenheit/45 degrees Celsius)
-3 cups of all-purpose flour
-1 teaspoon of salt
-1/2 cup of sugar
-3 tablespoons malted milk powder
-3 separated large eggs (Separate the eggs and place the three egg whites in one large mixing bowl and the three egg yolks into another large mixing bowl)
-1/2 cup of melted butter
-1 teaspoon of vanilla extract
Instructions:
1. Pour 2 cups of warm milk (110 degrees Fahrenheit/45 degrees Celsius) into a large mixing bowl and then pour in the package of yeast. Use a thermometer to make certain that the warm milk is about 110 degrees Fahrenheit because the yeast needs warm milk to activate. If it is too cold, the yeast will remain inactive but it should not be too hot either (120 degrees Fahrenheit or higher) because the yeast will begin dying off and won’t produce the carbon dioxide gas required to make the batter rise.
You can add some sugar to the yeast and warm water to speed up the activation process because the yeast will feed on the sugar and begin multiplying. Stir it with a spoon. You will know that it is working when you see it foaming on the top. This process takes about 10 minutes.
Cover the bowl with plastic wrap and place it in a warm place. Let the batter sit there for 1 hour while it doubles in size.
2. Preheat your Mickey Mouse waffle maker to the ideal operating temperature which should take about 5 minutes.
3. Pour the all-purpose flour, salt, and malted milk powder into the large mixing bowl with the yeast and then whisk the ingredients together until they are blended together.
4. Add the wet ingredients to the dry ingredients from the mixture in step 3 and whisk until just combined.
5. For all three eggs, break each egg and separate the egg white from the egg yolk. Then place the egg white in one large mixing bowl and the egg yolk in another large mixing bowl.
6. Whisk the three egg whites until stiff peaks form and the peaks don’t collapse onto themselves.
7. Fold the whipped egg whites carefully into the batter and mix it in very carefully. Be careful to not overmix because that will pop some of the air bubbles in the whipped egg whites and your batter will not rise as much as you would want it to. If you did everything correctly, the heat from the waffle maker will cause the air bubbles to expand and the batter to rise.
8. Make certain that the cooking surface is hot enough by dripping some droplets of water on the cooking plates. If the water droplets sizzle and evaporate, this means the plates are hot enough and you should pour the batter onto the waffle plates and bake the batter according to the manufacturer’s instructions.
9. The baking process should last about 5 minutes. Take the waffles out with a wooden spoon or plastic tongs to avoid scratching the Teflon-coated surface and ending up with flakes of Teflon in your next batch of waffles.
